Brunch, Baby, Brunch

My Slow Down Sunday is BACK! Sunday's are for relaxing and mimosas and brunch! Thats my motto and since wedding season is quickly approaching I am really taking in two day weekends while I can. Brunch food is hands down the best food ever so I'm sharing with you this epic and easy crowd pleasing recipe.

1 tsp lemon juice

1/2 tsp mustard

Yellow Sauce:

1/2 cup heavy whipping cream

1/2 cup milk

add cheese until it is smooth and mixed (I used cheddar)

dash garlic salt

What you do:

Preheat your oven to 350

- Cook meat and eggs

- Cut your biscuits into fourths and add to a large freezer bag with melted butter

- Add the cooked eggs and meat and shake around to combine everything

- Pour mixture into 6 cup greased bundt pan

- Bake for 30 minutes, while it bakes make your sauces.

- Give it 5 minutes to cool and add your sauce.

Believe me when I say this is delicious, lopsided yes, but delicious nonetheless. I hope you have a relaxing and fabulous Sunday full of all the things you love..including brunch.

Cheers!

Get Fancy

Sometimes it doesn't take too much to make a fancy canapé. My go-to is always a crab cake because it's simple, chic, and the most important part, delicious. Also I can't hear the words crab cake and not hear Vince Vaughn from Wedding Crashers.

Anywho, not only is this totally perfect for a gathering, it's also skinny. As it is from the cookbook Skinny Taste. Seriously go get a copy because it's fantastic!

Here is what you need:

1/2 cup panko bread crumbs

1 large egg

1 large egg white

2 tbsp finely chopped red bell pepper

1 tbsp light mayo

2 tbsp finely chopped fresh parsley

1 tbsp fresh lemon juice

a few dashes of hot sauce

salt

1/8 tsp pepper

9 oz crabmeat

Combine panko, both eggs, pepper, mayo, parsley, hot sauce, sprinkle some salt and pepper. Add crab meat. Shape into 8 patties or if serving as appetizers make 16 balls. Refrigerate for 30 minutes before baking. Preheat oven to 425, spray baking sheet with cooking spray and place the crab cakes. Bake until golden, turn once, about 8 minutes on each side. Serve with lemon wedges or tomato.

Happy Hump Day! I swear I can almost see the weekend in the distance.

Dinner For Two

Happy February!

This is such a fun month. First of all, Spring is soon! Always very exciting. Second, there is no better time to talk about fancy undergarments, sweet treats, and delicious just for two recipes. Which is just what this post is about. MK and I have been together for almost ten years so that's given us many different times to do different things for Valentine's Day. From having dinner right in front of our fireplace, to landing in Paris on the day of love, we've had them all. If you are having a romantic night in (which are often the best ones) I've found a perfect recipe for you. This easy recipe won't keep you in the kitchen all night but I can assure you that it is a crowd pleaser.

Basil pesto Chicken Pasta

with Sundried Tomatoes and Broccoli

Here is what you need:

-2 cups pasta of your choice, I used orecchiette because it's fancy but feel free to use a simple penne

-1/4 cup sundried tomatoes in olive oil, chopped up

- Half large red onion

-3 cloves thinly sliced garlic

-1/2 tsp crushed red pepper

-1 large chicken brest chopped

-4 tbsp pesto, you could make your own for vday just buy it and save some time

-1 cup cooked broccoli

-salt and pepper to taste

Here is what you do:

1) Cook your pasta

2) In a large skillet on medium heat add tomatoes, garlic, onion, and the red pepper.

3) Toss in that chicken and cook

4) Add in the pesto and turn the heat to low

5) Add the cooked broccoli and pasta to the pot. Toss everything together. Also, feel free to add in some fresh mozzarella for some extra yum.

Is this low cal? Well no. But hey, it's for a special day right? Treat yo self.

Wine Pairing: Sauvignon Blanc

Have a fantastic Wednesday!
