A Fancy Brunch Made Healthy

I’ve had this little slice of the internet for seven years so by now you probably know that this girl loves Brunch. I’ve done many posts about it and I don’t intend to stop.
This rather beautiful recipe is so chic and fast but it’s also healthy to boot!

All you do for this one is preheat your oven to 450 degrees, throw your asparagus on a baking sheet and drizzle them with a mixture of the olive oil, lemon juice, honey, caraway seeds, and a little salt. Then roast for 15 minutes, for the last five minutes add salmon to the top.

In a small bowl combine yogurt, capers, brine, and dill. Place your eggs on top of roasted asparagus and spoon on some mounds of the yogurt mixture. Top it off with red onions and dill.

This is a recipe I will absolutely have on repeat this Summer! Of course I’ll add champagne along with this delicious dish!

Kicking Off Summer

The official start of Summer is Sunday so I thought it was only appropriate to give you the most epic and delicious lobster roll!

what you do:

  1. Put the cooked lobster and crab in a bowl and set aside

  2. In another bowl mix together mayo, celery, dill, basil, salt and a dash of Old Bay seasoning. Then add in your seafood.

  3. I used my air fryer to toast my buns. Before toasting, spread some mayo on them. Toast to preference.

This recipe is beyond perfect to kick off the summer season! It’s fancy but so very easy. Adding crab to this lobster roll really takes it up a notch.

Meatless Favorites

During Lent for many years, I give meat up. But not fish. One time I gave it up for Lent and didn’t eat it again for three years only to break it on my honeymoon.

So this year I did the same. Only fish no meat. When Lent was over I decided to start The Mediterranean Diet. Very up my ally. I thought I would share with you three very easy recipes that were constantly in my rotation. These would be perfect for a Meatless Monday!

This is so easy and delicious! All you do is spread the sweet potato on your wrap an and add everything else. I sprinkled with garlic salt because, well, I do that with everything.

Again this is so easy and ready in minutes! Simply toss everything but the cheese in some olive oil and cook until he peppers are blistered. When done, add the cheese so it gets a little meaty.

I love tuna steaks in my soul and eat them regularly. For this salad just assemble as you would any other salad. And after the tuna steak is thawed, season with whatever you want, no surprise here I use garlic. With a little oil in the pan, on high heat, sear the steak on both sized for about two minutes. I like a more rare tuna but if you prefer it well done aim for about four minutes on both sides.
