A Beautiful Burrito Bowl

The amazing thing about this fabulous weeknight meal is that you can customize as you would like. For me, give me everything! For my sweet Husband it was rice, cheese and steak. I need more colors myself. This is great because it's healthy and quick just as good weeknight food should be! 

I started with 1/2 cup cooked rice, added a little steak, lettuce, tomato, corn, black beans, and a smidge of Mexican cheese.

As far as the sauce goes, I made my own by no recipe. I used some miricle whip, sour cream, lime juice, and sriracha. You kind of have to play with the ratios depending on how spicy you like your sauce.  This good for you recipe totally hit the spot! I recommend adding this to your dinner or even lunch (on a smaller scale) rotation!

Get Your Grill On

Whoo hoo! It's time to fire up the grill! There are so many reason why I love preparing food this way. When it comes to food what's better than healthy, quick, and most importantly delicious? Here is my latest go to meal and you only need four things, well, five if you count the corn. Which you totally should.

Cook your chicken, add whichever pesto is your favorite (for this I added basil pesto), then spread on your cheese. I used Creamy Mozzarella Sun-Dried Tomato & Basil by The Laughing Cow. I used two wedges and it's only 35 calories for each. If you haven't tried this amazing cheese yet I highly reccomend it! Now add some fresh tomato, close the grill lid for about 5 minutes and enjoy!

I am about to give you a tip that totally changed my life for cooking corn on the cob. About  year or so ago MK and I were hanging out at our friends lake house eating some amazing food. This is when someone told us about making corn in the microwave. All you do is cut off the large end of each corn (not shucked) and put it in the microwave for 3 minutes per cob. Then, just squeeze the corn out of its shell, no shucking ever required! Try it. You won't regret it.

Cinco De Avocado

Recently one of my fabulous followers asked me to do more "Fast Tips" and I am delighted to do so! Even though I only do hair and make up by request I love doing it and learning as much as I can. An extra bonus is getting to share it with you. So I give you "Fast Tip Tuesday"!

Happy Cinco De Mayo! It's no secret an avocado is basically my favorite thing to eat. I always have them at the ready. Today I give you two different ways to use that avocado.

Before you get the tequila shots and guacamole ready here is an awesome hair mask:

Peel an avocado and get rid of the seed, mash well, you can even use a blender. Add one egg yoke and a 1/2 teaspoon olive oil. Throw it on from root to tip and let it sit for about 30 minutes. After that wash it really well with shampoo and conditioner.  It leaves your mane so silky and smooth!

Next, this is my favorite guacamole recipe. It's easy and quick and I will absolutely be eating it tonight! 

  • 2 avocados
  • 1 small red onion
  • 1 (or more) garlic clove..I like mine very garlicky 
  • 1 ripe tomato
  • 1 juiced lime

Mash those bad boys up in a bowl and toss in everything else. Then, do a shot of tequila because it's Cinco De Mayo damnit! Cheers!
