Bruching

I don't know what the question is but the answer is Brunch. My most favorite meal. There are few things better than Sunday Brunch. After running and running (figuratively and literally) all week it is so nice to just relax and reconnect with friends and family over some white wine and delicious brunch food. Which is exactly why I wanted to share this super easy recipe with you....

Along with a couple other things, I made this crescent surrounded casserole type of dish. I don't know it's name because I kind of came up with the idea on my own (even though I'm sure there are similar recipes out there). Make this for your next Brunch, you won't regret it.

Use a springform pan and use one crescent roll for the bottom. Just press it down, use the second crescent to build up a dough wall. Add as many eggs as you'd like. I used about 6 in the first layer. Then, add whatever meats and cheeses you want. I used ham and salami and then topped that with provolone.

After that, add more egg. I topped this with a handful of some delicious spinach.

I didn't expect the dough to actually curl around this scrumptious dish but it did and was amazing. Give it about an hour or so to cook on 400 degrees.

I hope you all have a wonderful and relaxing Sunday!! xoxo

No Carb Pizza

I find it amazing how diverse cauliflower can be.  I've posted this recipe before in other places but I always feel like it should be a known recipe.

  • 1 Cup Mozzarella
  • 1 Egg
  • 1 Cup "riced"  Cauliflower

To get the cauliflower ideal for pizza or breadsticks put it in a food processor. Then mix everything together and line your pan with parchment paper, press it into the pan. Preheat the oven at 350 and cook for 30 minutes, flip it over, and cool for another 30 minutes.

It takes a little time, but it's worth it to eat pizza and no carbs!

Elegant Decadence

On Sunday, We hosted my Sister and Brother-In-laws birthday party and wanted to share my main course Stuffed Flank Steak. It is a great meal to make when feeding more than five people.

Calories couldn't have been further from my mind for this one! I seasoned, then filled my steak with spinach, mozzarella, prosciutto, and Gorgonzola. All you do is roll it up, toss it in the oven on 350 for an hour and continue on to the other things you are making!
