Simple Salmon

These days the "fast" in Fast Fashionista has a whole new meaning. When I have a 15-20 minute window I have to be ten times as fast as I used to be. So dinner through the week has to be really fast...and healthy. This is one of my favorite salmon recipes because it's both. Perfect when you're looking for something with health benefits but so don't feel like making your kitchen a mess or really dealing with dinner in general. It's this simple:

2 salmon fillets

1/2 pound asparagus  

1 1/2 olive oil

2 tbsp minced garlic

salt for taste

lemon slices

parsley for a little flavor on top

Cut your salmon in half if not done already and cut the ends off of your asparagus. On a piece of foil add your asparagus and put a piece of salmon on top. Then, in a small bowl mix together oil and garlic. Sprinkle salt for flavor and add two lemon slices, add your parsley and wrap your foil. Pop it in the oven on 400 degrees for 25 minutes and pour yourself a drink.

Get Fancy

Sometimes it doesn't take too much to make a fancy canapé. My go-to is always a crab cake because it's simple, chic, and the most important part, delicious. Also I can't hear the words crab cake and not hear Vince Vaughn from Wedding Crashers.  

Anywho, not only is this totally perfect for a gathering, it's also skinny. As it is from the cookbook Skinny Taste. Seriously go get a copy because it's fantastic!

Here is what you need: 

1/2 cup panko bread crumbs

1 large egg

1 large egg white

2 tbsp finely chopped red bell pepper

1 tbsp light mayo

2 tbsp finely chopped fresh parsley

1 tbsp fresh lemon juice

a few dashes of hot sauce

salt

1/8 tsp pepper

9 oz crabmeat

Combine panko, both eggs, pepper, mayo, parsley, hot sauce, sprinkle some salt and pepper. Add crab meat. Shape into 8 patties or if serving as appetizers make 16 balls. Refrigerate for 30 minutes before baking. Preheat oven to 425, spray baking sheet with cooking spray and place the crab cakes. Bake until golden, turn once, about 8 minutes on each side. Serve with lemon wedges or tomato.

Sassy Salsa

Health has always been important to me. It's very much a part of my daily life so there is no better time than now to start sharing some healthy and fast recipes! I'm cutting out dairy for a bit so sometimes you need to jazz up a dish. This salsa is amazing and perfect for just that. Here is what you need:

6 Tomatoes (recipe makes 3 cups)

1/2 cup fresh cilantro

1/2 onion, diced

3 cloves garlic, minced

1/2 tsp salt

1/4 tsp pepper

1/2 lemon juice

Mix everything in a bowl and boom you're done! You can use it to top almost anything! Or even better whip up with chips when you have guests.
