Lunchtime Love

Poor lunch is easily the most overlooked meal of the day. It usually has to be quick and efficient. Every now and again I get pretty obsessed with a certain meal and eat it for a long period of time. Kind of like how I have basically been eating Dippy Eggs for breakfast every day of my life for like years. I switch it up sometimes but for the most part, its Dippy Eggs all the way.

This adorable little meal that I have been making for lunch everyday lately has put a bright spot in the middle of my day. With it's balance of carbs, dairy and veggies its a pretty healthy option coming in at about 375 calories.

You'll need:

  • 2 tortilla shells
  • Your choice of meat - I use turkey
  • Your choice of cheese - I use Swiss
  • 1/2 tomato
  • lettuce
  • just a dash of Miracle Whip

This one isn't rocket science folks but here is what I do. I put the meat and cheese first, add just a tiny bit of the Miracle Whip, lettuce and tomato. Roll it, cut and ENJOY!

Avoca-do!

I've said it once and I will say it again...I am an absolute avocado freak! I love them! Having said that, I am also obsessed with eggs too. Put the two together and you've got my favorite meal EVER! Not only is this healthy but has literally all of my favorite things! Did I forget to mention the fabulous and versatile tortilla shell?! Also another favorite of mine. This little "breakfast pizza" has now been thrown into my dinner rotation because breakfast for dinner is pretty much awesome.

Its so easy too! Just heat your tortilla shell for about 20 seconds, mash your avocado with a hint of lime juice and a little garlic of your choice, and spread it on the shell. Then put a little bit of oil in a pan on medium and wait for it to heat a little until a water drop will sizzle. Once it does, drop the egg in and immediately put the heat on low. Let the egg cook until the egg white is cooked and the yolk is just starting to get a little hard. Then blot the oil off the bottom of the egg and put it on your tortilla shell.

Tada! Best meal ever!

Hangin' In The Kitchen

One of my very favorite places to be is in the kitchen! Music blasting, wine in hand, and cookin'. That's my bliss. Last weekend can be put very simply: we didn't stop! We shot back to back weddings on Friday and Saturday, and on Sunday it was my parents 40th wedding anniversary. Quite a milestone. In honor of that, MK and I had the family over for home made spaghetti and some celebrating.

It's as simple as this, pasta from scratch is the absolute best! Its easy too. The only thing you need is flour, eggs and a little salt and water. Oh, and a little patience of course.

I wanted to share my baguette recipe with you since it is easy to make and perfect with basically any meal.

  • 2 1/2 cup flour
  • 1 tbsp. sugar
  • 1 packet of instant yeast
  • 1 cup warm water
  • 1 tsp salt
  • a dash here and there of rosemary or thyme (or whichever spices are your favorite)

All you do now is put the water and yeast in your mixer and let sit for 5 minutes, then add everything else. Flour a surface, and knead the bread. Let rise for about 40 minutes, knead again, shape into baguette, make 3 or 4 slices in the top and bake on 450 for 20-30 minutes depending on your oven. Make sure its a golden color for that little crunch.
