It isn't always easy to be inventive with dinner ideas. We get stuck in ruts (or at least I do) and end up making the same things. Lasagna Roll Ups are a fun twist on the classic dish. Throw anything you want in there!
Then just pop it in the oven on 350 for 25 minutes.
Hands down I could eat an avocado for every meal. Absolutely love them! A few nights ago a friend of mine and I went out for margaritas and a little girl talk. I wasn't planning on getting anything to eat but then of course started looking at the menu. As much as I wanted something cheesy and delicious I knew I'd regret it so I went with a guacamole salad. It was perfect! Not to mention, healthy and just the right amount of filling. So perfect in fact, that I recreated it last Friday night.
Here is my easy guacamole recipe:
- 2 avocados
- 1 small red onion
- 1 minced garlic clove
- 1 ripe tomato
- a dash of lime juice
(mash it all with a fork)
It's quick, easy, and healthy to boot!
