The Perfect Summer Caprese

Simple.

Fast.

Healthy.

Thoroughly enjoyable.

That is what today’s post is all about. No one want’s to be cooking dinner for long periods of time, especially in the summer. I’ve mentioned before that Skinny Taste by Gina Homolka is my very favorite line of cookbooks. I take this recipe from “Skinny Taste Simple”. It’s truly the most perfect lunch or dinner for any shrimp lover like myself. With only a few ingredients this dish comes together so quickly.

what you do:

In a bowl, season the shrimp with your seasoning. Add the shrimp to a medium skillet with a splash of oil and cook. This should only take 2-3 minutes.

Next assemble the salad by placing about one cup of whatever greens you decided on and layer tomato, cheese, and avocado. Add a small splash of olive oil to the salad and sprinkle with some salt of your choice. Then, drizzle with balsamic glaze, add your shrimp and enjoy!

p.s. adding fresh basil will not only make it a true caprese but elevate the dish.

If you’re in my neck of the woods then you know it’s been a very cold June and even though it technically isn’t summer yet this dish is perfect to kick it off in a few short(ish) days.

Sheer Delight

Well…hello there!

Have I been in a tunnel of complete and utter busy? Yes. Is my closet a mess? Oh yes. But, I’m a real person and that’s just life right now. No apologies.

Today I’m talking about a summer trend that you might want to jump on. It’s the sheer skirt! So much fun. And you can show as much or as little as you’d like. I have a couple dresses that are great for layering. Maybe if you don’t want to show that much you can throw a blazer situation over it like I did. Or if you’re feelin’ if and yourself rock a bra and short/brief under it (allow me some more time on the treadmill for that). Another way to rock the trend? Thrown on a slip dress under this sheer one.

Anyway, it’s an “add sheer dress to cart” kind of day for me. I feel doing this trend with a dress makes it more versatile and it gives you different ways to be able to wear it.

A Perfect Patio Sip

We made it through another week! This post is like really important if you’re looking for a new cocktail to add to your repertoire. This has really been my drink of the moment and I’ve got to admit how obsessed I am.

This cocktail is diet and taste friendly. It also just so happens to be the perfect patio drink and that is exactly where you’ll find me on a sunny day (which sadly isn’t today in my neck of the woods).

What you do:

Add basil to a shaker with lime juice and muddle. Then add ice, vodka (I always use Grey Goose), and syrup. Then,

shake, shake shake!

Pour this into a martini glass and garnish with basil unless….

Want to kick this delicious cocktail up a notch? Add a splash of Champagne or Prosecco on top. Trust me on this one.
