It sure is no secret that many of us try to eat healthier in the new year and I’m about to be one busy girl. This delicious and quick recipe will help you get there. Salmon is always a great place to start when you are really looking to improve your eating. Like I said no fuss when it comes to this blog. So here is the recipe and what you need for…

“Fast Salmon Salad”

what you do:

Shred your radishes, chop those cucumbers, and chop that onion. Then throw them in a bowl. Cook your salmon the way you like it and throw it in too! I also added dill, oregano, and garlic salt. Mix it all together.

in a different bowl, juice the lemon, mince the garlic, and add 1/2 cup lite Mircle Whip (or mayo), and one teaspoon of Dijon mustard. Mix it and add it in with everything.

You can use lettuce ups like I did, or you can put them on bread or a cracker. This recipe is great because you can just have it in the fridge waiting for you.

A No Fail Fall Bite

Oh, hello there, Friends!

Guys, this human right here is exhausted. It’s been go, go, go since we got back from Hawaii in September, and I haven’t had much time to get my head on right or…finish a thought? So, let’s make an easy five ingredient dish. Make it to entertain or for everyone to pick on during the week when you might be busy running around.

what you need:

  1. Preheat oven to 400 degrees.

  2. Lay out puff pastry and score it.

  3. Add a layer of cheese and then apple.

  4. Put it in the over for round 25 minutes (I did 30).

  5. Pull it out and add thyme and honey.

This is absolutely going to be best when it’s right out of the oven. I served mine with champs an it was the perfect addition. Also, think Thanksgiving appetizer for this recipe. It is a seriously no fail fall bite.

Shifting into Soup Mode…

The first official day of fall is this Sunday!

If you know anything about me then you know I love soup and seafood. So, today I’m combining them both!

This recipe comes together rather quickly and really hits the spot when you’re wanting a hearty bisque without the guilt. Feel free to use whatever seafood you have for this dish. I just happened to have these on hand (minus the lobster, I did go buy him just for this).

what you do:

  1. Melt butter, and add onion, garlic, carrots, and bay leaf. Let them cook for maybe ten minutes or so until onions are translucent.

  2. Throw in the flour and cook another couple minutes.

  3. Add seafood stock, clam juice, oregano, diced tomatoes, and cream cheese. Let that simmer for around 30 minutes.

  4. Remove bay leaf and add to a blender. Once blended, return to your pot and add milk of your choice (you can add heavy cream here if you wanted to).

  5. Finally, add in any and all seafood you’d like to use. Let that simmer for about 10 minutes.

  6. Top with anything from some fresh Parmesan or fresh basil which is what I went with (it’s hard for me not to add basil to everything).
