Soup for the Soul

Fun fact about me: I freaking love soup.

Like in my soul. I’ll make and eat it all year round but it sure does hit different on a cold winter day. A long time ago I used to make a seafood bisque and I can’t for the life of me remember how I made it. So I decided to make a new one. Keto friendly, too. One thing I did with this recipe was I used already cooked frozen shrimp. Mainly because I had it in my freezer.

what you do:

  1. Thaw shrimp set aside.

  2. In a pot, add oil and onions until your kitchen smells amazing. Then add garlic and cook for about 30 seconds, add in all of your spices and cook for about one minute.

  3. Add tomato paste, wine, and Worcestershire sauce. Cook for about five minutes so that you cook off the alcohol. Add in stock.

  4. Add everything to a blender and blend until smooth. Return to pot and add in cream and parm cheese.

  5. Toss in shrimp and cook for a few. Serve and enjoy!

This recipe makes a pretty huge batch, so I’ve been eating it for lunch every day. And let me tell you, it hits the spot every day.

Fast and To The Point

Hey there, Friends!

I feel like a broken record talking about how busy I am but man I’m freaking busy! It’s been hard to keep up as of late. That’s one of the reasons I have another fast weeknight night recipe! The last one in January’s fast weeknight recipes.

Listen, I could eat this salad every day of the week! It’s so fast and I actually made mine ahead of time so that I could I concentrate on making dinner for the fam. I just pulled it out and ate it really quickly. This is truly a perfect weeknight meal! Healthy, too!

A One Pot Wonder

Hello Friend’s and Happy Thursday!

Since this is a very crazy work week for me, I am a day late in posting my easy one pot weeknight recipes. So I’m going to get right to the point. I have to say if you like salmon… MAKE THIS! I have absolutely added it to my dinner rotation. Its fast, easy, and melt in your mouth delicious. It’s also low carb if that’s your thing but feel free to add pasta of any kind.

Add some oil and then your salmon. Season with a little red pepper flakes and cook on each side for about 7 minutes or until done depending on your salmon size. Remove from pan and garlic, and onion. Let simmer for a few until fragrant. Throw in mushrooms. Let them cook. Then add in your cream, milk, cream cheese, and other cheeses. Toss in spinach, let dramatically shrink, and add in salmon. Throw it over some pasta or eat as is.
