Pesto, Please!

Nothing feels more like summer than fresh herbs! My favorite one to do anything with is hands down Basil. You can do so many things with it! I love having pesto on hand because well, it's delicious but also versatile. This fast pesto recipe is perfect for throwing on pasta, adding to your grilled cheese or in this case putting it on salmon! Yum!

  • 1/2 cup parmesan cheese
  • 1 bunch of Basil
  • 1/2 cup olive oil
  • 1-2 Tbsp lemon juice
  • 4 gloves garlic
  • salt to taste

This is as easy as cutting your stems from the Basil and mince your garlic (you don't have to but it helps make it quicker), throw everything minus the lemon and salt in a food processer and mix, then as those.

Any time I make salmon I always have to have pesto with it. It's the perfect addition!

Enjoy your Tuesday!

Cottontail Cocktail

Happy Easter Weekend! Hopefully most of you got today off. With that being said, maybe Happy Hour can start a little sooner with this delicious weekend themed dessert and cocktail.

Let's say you end up in the situation where you need to bring something to Easter dinner. I've got you covered. This super cute and easy dessert will be perfect. First make chocolate pudding in disposable cups if you're on the go or just don't want the clean up. Then add crushed Oreo's (use the chocolate filling ones, not what I used to give more of a dirt effect). To finish this off, using white chocolate with orange food coloring and dip some strawberries in it. Ta da! Make it the night before so that you can have a nice relaxing Eater morning.

The Cottontail Martini

1.5 oz vanilla vodka

1.5 oz coconut rum

2 oz skim milk

1/2 oz cream of coconut

splash pineapple juice

Chopped coconut and marshmallow for garnish (my marshmallow is m.i.a.)

I used icing to rim the glass and rolled it in coconut. Put everything in the shaker with ice and strain into glass. Cut a small slice in marshmallow and add to glass. Now you're ready to hop right into the weekend.

I hope all of you enjoy the holiday weekend!

Cheers!

What you do:

- Preheat your oven to 450

- Coat the cast iron pan with oil

- Push pizza dough into the pan

- Add sauce, cheese and toppings

- Put skillet in oven for about 17 minutes

When you take it out of the oven be so careful. Obviously it's very hot.

So I hope this day finds you wish some delicious pizza in hand!
