Time To Toast

 I truly love a good canapé! Great things surround delicious food and wine. Not only is this very elegant appetizer so easy and fast it's also ecstatically pleasing. Because let's face it, as the hostess you want to be chatting and hanging out too, not slaving away in the kitchen. This is from one of my many cookbooks named "Fun and Festive". Well I'll say.

Spanish Ham and Cheese Toasts

6oz package of goat cheese

1 tsp cumin

1/2 tsp paprika

24 toasted French bread slices

1/2 cup fresh parsley

8 slices prosciutto or Serrano ham

First put the goat cheese in a small bowl, add cumin and paprika, stir until blended and cover and let sit for 30 minutes. Then all you do is spread the mixture on the bread sprinkle with parsley and top with ham.

It's fast, easy, and chic. Also don't forget to fill that wine basically to the brim like I did! Haha!

A Little Bit Of Summer

The past two weeks have been an absolute blur! I'm actually shocked I know what day it is! If you didn't already see on my social media, we've been on the go. We conqured Universal Studios, shot a beautiful wedding on the beach, drove all the way down to The Keys, and put over 1000 miles on our rental car.  Then came home to shoot back to back weddings and a at least one shoot every day this week. Exhausted? Beyond.  

Needless to say July has been crazy! With it soon coming to a close I thought it would be a great time to share my Zucchini Bread Recipe!  There are two things that must happen at the very least once every Summer. Chopping up a deicious watermelon and making Zuccini Bread. Obviously life gets busy (especially for me this time of year) so it was such a nice change of pace to just chill out, drink a glass of wine, jam out to Britney Spears Pandora (no shame!) and get my bake on. Make this the next time someone hands you a giant zucchini from their garden, because tis' the season.

Zucchini Bread

  • 3 cups flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 tbsp vanilla  
  • 4 eggs
  • 1 1/4 vegetable oil
  • 2 cups white sugar
  • 2 zucchini grated, or half of a giant one
  • 1 cup chocolate chips (optional) 

Preheat oven to 325 degrees, grease two loaf pans (8x4), in a bowl mix oil, vanilla, eggs, sugar, and slowly add the flour mixture into the egg mixture, once mixed add zucchini and chips. Bake for an hour. Then enjoy!

Pimm and Proper

You guys ready to get fancy on this fine Friday?

Today's Martini Moment is not a martini at all. It's been a while since I've done an unexpected pairing and the last one was a big hit. Without any adue I give you Pimm's Cup and Lamb Skewers. Each compliments the other. This cocktail is the perfect summer drink! Here is how to make it:
  • 1 1/2 oz Pimms
  • 1/4 Gin
  • 1/4 cucumber, muddled
  • 1 oz lemon juice
  • 4 oz Ginger Ale
  • 2 mint leaves

Directions:
Add lemon juice, mint, and cucumber to glass and muddle (like crazy). Add ice and the remaining ingredients, the add Ginger Ale last. Using a vegetable peeler, peel a cucumber length-wise. Using a pick, thread a cucumber, curling it as you go. Garnish with cucumber and rosebud. Whaaaat? Best garnish ever? Yes.

Next just throw some lamb and red onion on a skewer, sprinkled with Rosemary and Garlic. This is a perfect combination for a dinner party or just dinner!
